Electrical Engineer/math major trying to get into CS during Engineering PhD: better to take Operating Systems or Networks?

I'm trying to build my programming skills (I have some background skills) and general computer understanding as I go into my PhD in Biomedical engineering. My thesis project is building a computational brain map, so it is mostly (80%) programming. I get to take a good number of grad-level CS courses.

For some background, I did an undergraduate degree in math and a masters in Electrical engineering. Relevant undergrad CS courses I took were OOP (Java), Data structures & algorithms (java+ python), and scientific computing in C++ (grad level).

I have the choice of taking an OS course or a Computer Networks course. The OS course is very difficult, but I feel like it could fill in a lot of the gaps in my CS education so far (rigor, debugging, software engineering). The Computer networks course looks pretty interesting and I would build an HTTP server in Java.

Which course do you guys think would help me sharpen my skill in computer science?

I hear MacOS is great but I don't really like apple laptops after the keyboard change and they are quite overpriced. Will Linux or Ubuntu (maybe even windows) be good enough for starting a CS degree? What are the pros and cons between them and is one superior to the other?
